How to make it
Cook the rice according to the package directions. While it simmers, pat the chicken thighs dry and season both sides with the paprika, garlic powder, salt, and pepper.
Heat the olive oil in a large skillet over medium-high. Add the chicken and cook 5–6 minutes per side, until deeply browned and cooked through to 165°F.
Move the chicken to a board and rest it for 5 minutes, then chop or shred it into bite-sized pieces.
Tip the black beans into the same skillet and warm for 2 minutes, scraping up the browned bits stuck to the pan — that's free flavor.
Build each bowl with rice on the bottom and chicken and beans on top. Divide into four containers if you're prepping ahead; it keeps in the fridge for four days.
